Muesli Streusel Cake

Ingredients

For the cake:
190 g cake flour
1½ tsp baking powder
½ tsp bicarbonate of soda
½ tsp salt
115 g KEFALOS butter (softened)
150 g sugar
2 large eggs
1 tsp vanilla essence
125 ml KEFALOS Smooth Vanilla Yoghurt

For the topping:
100 g KEFALOS Mixed Berry Muesli
50 g brown sugar
45 g KEFALOS butter (melted)

Optional filling:
80 g mixed berries (fresh or frozen)
1 tsp cornflour
1 tbsp sugar

Instructions

Preheat the oven to 180°C and grease a 20 cm round or square cake tin.

In a medium bowl, mix together the flour, baking powder, bicarbonate of soda and salt.

In another bowl, cream the KEFALOS butter and sugar until light and fluffy. Add the eggs and vanilla essence and beat until smooth.

Add half of the dry ingredients, then mix in the KEFALOS Smooth Vanilla Yoghurt. Stir in the remaining dry ingredients until combined.

Spread half the batter into the prepared tin. If using the berry filling, scatter it evenly over the layer, then top with the rest of the batter.

In a small bowl, combine KEFALOS Mixed Berry Muesli, brown sugar and melted butter. Sprinkle evenly over the top.

Bake for 35–40 minutes or until golden and a skewer inserted in the centre comes out clean.

Cool slightly before serving. Enjoy warm with a spoonful of KEFALOS Double Cream Yoghurt or a scoop of KEFALOS Vanilla Bean Ice Cream.
