Herb Butter Pasta with Kefalos Parmesan

Ingredients

  • 250 g pasta of your choice (spaghetti, linguine, or fettuccine work beautifully)
  • 3 tbsp Kefalos Butter
  • 1 clove garlic, finely chopped (optional)
  • A handful of fresh herbs, finely chopped – try parsley, basil, or oregano (or a mix!)
  • ½ cup freshly grated Kefalos Parmesan Cheese
  • Salt and freshly ground black pepper, to taste
  • A drizzle of olive oil (optional)

Instructions

  1. Cook the pasta:
    Bring a large pot of salted water to the boil. Cook the pasta according to the packet instructions until al dente. Reserve ¼ cup of the pasta water, then drain.
  2. Make the herb butter:
    In a large pan over low heat, melt the Kefalos Butter. Add the garlic (if using) and cook gently for about 1 minute until fragrant — don’t let it brown.
  3. Add the herbs:
    Stir in the chopped herbs and let them sizzle lightly in the butter for 30 seconds.
  4. Combine:
    Add the cooked pasta to the pan, tossing gently to coat in the herby butter. If needed, add a splash of the reserved pasta water to loosen the sauce.
  5. Finish with Parmesan:
    Remove from the heat and sprinkle generously with Kefalos Parmesan Cheese. Toss again until the cheese melts slightly and clings to the pasta. Season with salt and pepper.
  6. Serve:
    Dish up warm and top with a few extra Parmesan shavings and fresh herbs for a simple, satisfying meal.
