Creamy Yoghurt & Cucumber Flatbread Wraps

When the days are hot and the evenings feel long, the last thing most of us want to do is stand over a stove. These creamy yoghurt and cucumber flatbread wraps are light, cooling and easy to put together – perfect for January days when summer is still very much in charge.

They work just as well for a relaxed family supper as they do for an easy lunch, and if you feel like it, the flatbreads are surprisingly simple to make at home.

Ingredients

For the yoghurt and cucumber filling

  • 1 cup Kefalos Natural Yoghurt
  • ½ cucumber, grated and lightly squeezed
  • 1 small garlic clove, finely grated (optional)
  • Salt and black pepper, to taste

To assemble

  • 4 flatbreads or wraps
  • Optional fillings:
    • sliced tomato
    • grated carrot
    • lettuce
    • sliced avocado
    • leftover roast chicken or nuts
    • grated Kefalos cheese

Instructions

Step 1: Prepare the yoghurt filling

In a bowl, combine the Kefalos Natural Yoghurt, grated cucumber and garlic if using. Season lightly with salt and black pepper, mix well and set aside in the fridge while you prepare the flatbreads and fillings.

 

Step 2: Assemble the wraps

Warm the flatbreads briefly in a dry pan, or leave them at room temperature on very hot days. Spread a generous layer of the yoghurt mixture over each flatbread, add your chosen fillings, roll up and serve immediately.

 

To serve

These wraps are best enjoyed straight away while the flatbreads are warm and the filling is cool. Serve them with a simple green salad or fresh fruit for a light summer meal that does not weigh you down.
