If you’re looking to bring something a little more special to your table, this classic Chicken Cordon Bleu is the perfect choice. Golden and crisp on the outside, with a rich, melted Kefalos cheese centre, it’s a dish that feels both comforting and considered.
Using Kefalos cheeses like mozzarella for that perfect melt or kefalotiri for a slightly sharper, more refined flavour, this recipe turns a familiar favourite into something worth slowing down for. Ideal for a relaxed weekend meal or when you want to impress without overcomplicating things.
2–4 chicken breasts
4–8 slices good quality ham
4–8 slices Kefalos cheese (mozzarella, gouda, or kefalotiri)
1 cup flour
2 eggs, beaten
1–1½ cups breadcrumbs
Salt and pepper, to taste
Oil, Kefalos ghee or butter for frying
Choosing your Kefalos cheese:
Mozzarella – for a classic, smooth melt and that signature stretch
Gouda or Dutch gouda – for a creamy, balanced flavour
Kefalotiri – for a slightly sharper, more distinctive finish
Optional: Combine mozzarella with kefalotiri for both melt and depth of flavour
Prepare the Chicken: Slice each chicken breast horizontally (without cutting all the way through) and open it like a book. Place between cling film and gently flatten until even.
Layer the Flavour: Season with salt and pepper. Add a slice of ham and your chosen Kefalos cheese to each piece.
Roll It Up: Roll the chicken tightly and secure with toothpicks to keep everything in place.
Crumb Coating: Dip each piece in flour, then egg, then breadcrumbs. For extra crunch, repeat the egg and breadcrumb step.
Golden Finish: Heat oil or butter in a pan over medium heat and cook the chicken until golden on all sides.
Oven Time: Transfer to a preheated oven at 180°C and bake for 15–20 minutes until cooked through and the cheese is perfectly melted inside.
Rest and Serve: Allow to rest for a few minutes before slicing. Serve warm and enjoy that perfectly melted Kefalos centre.
