Salted Butter Fudge with Kefalos Butter

Rich, buttery and perfectly balanced with a touch of salt, this homemade Salted Butter Fudge is an irresistible treat for winter. Made with KEFALOS Butter, it’s wonderfully smooth, easy to prepare and perfect for sharing with family and friends.

Ingredients

  • 125 g KEFALOS Butter
  • 400 g caster sugar
  • 395 g condensed milk (1 tin)
  • 150 ml KEFALOS full cream milk
  • 2 tbsp golden syrup
  • 1 tsp vanilla extract
  • 1 tsp flaky sea salt, plus extra for sprinkling

Instructions

  1. Line a 20 cm square tin with baking paper.
  2. Melt the KEFALOS Butter in a heavy-based saucepan over low heat.
  3. Add the sugar, condensed milk, KEFALOS full cream milk and golden syrup. Stir until the sugar has dissolved.
  4. Increase to a gentle boil, stirring continuously for 10–12 minutes until the mixture reaches the soft-ball stage (about 116°C) or thickens noticeably.
  5. Remove from the heat and stir in the vanilla extract and sea salt.
  6. Beat the mixture for 2–3 minutes until it starts to lose its glossy appearance.
  7. Pour into the prepared tin and smooth the surface.
  8. Sprinkle with a little extra flaky sea salt.
  9. Allow to cool completely, then refrigerate until firm.
  10. Cut into squares and enjoy.
To Serve

Cut into bite-sized squares and serve with tea or coffee. Pack into a decorative jar or box for a thoughtful homemade gift.

 

Chef’s Tip

For perfectly smooth fudge, stir continuously while cooking and avoid scraping any sugar crystals from the sides of the saucepan into the mixture.
