Christmas Vanilla Ice Cream Cake

Sweeten your celebrations with our recipe for a delicious Christmas Vanilla Ice Cream Cake! This delightful frozen treat is a harmony of KEFALOS Vanilla Ice Cream, gingerbread cookies, and warm holiday spices. Perfect for spreading joy at your festive gatherings!

Ingredients

  • 1 litre of KEFALOS Vanilla Ice Cream
  • 1 cup of crushed gingerbread cookies
  • 1/2 cup of chopped mixed nuts (walnuts, pecans, or almonds)
  • 1/4 cup of melted butter
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/8 teaspoon of ground cloves
  • 1/2 cup of whipped KEFALOS Fresh Cream
  • Red and green sprinkles for decoration
  • Additional gingerbread cookies for garnish (optional)

Instructions

  1. Prepare the Crust:
    • In a bowl, mix the crushed gingerbread cookies, chopped nuts, melted butter, cinnamon, nutmeg, and cloves until well combined.
    • Press the mixture into the bottom of a smaller springform pan or any suitable container to create the crust.
    • Place the crust in the freezer for about 15-20 minutes to set.
  2. Layer the Vanilla Ice Cream:
    • Allow the KEFALOS Vanilla Ice Cream to soften slightly.
    • Spread a layer of vanilla ice cream over the gingerbread crust.
    • Place the pan back in the freezer to let the ice cream set.
  3. Repeat the Layers:
    • Add another layer of the gingerbread cookie mixture on top of the vanilla ice cream.
    • Follow with another layer of KEFALOS Vanilla Ice Cream.
    • Continue layering until the pan is filled, finishing with a layer of vanilla ice cream on top.
  4. Smooth the Top:
    • Smooth the top layer of vanilla ice cream with a spatula.
    • Place the cake back in the freezer and let it freeze for at least 4-6 hours or overnight.
  5. Decorate and Serve:
    • Once the cake is fully frozen, remove it from the springform pan.
    • Whip the KEFALOS Fresh Cream until stiff peaks form and spread it over the top of the cake.
    • Decorate with red and green sprinkles and, if desired, additional gingerbread cookies.
  6. Serve and Enjoy:
    • Slice the Christmas Vanilla Ice Cream Cake and serve chilled.
