Are you longing for some cheesy winter comfort food? Try this delicious but simple CHEDDAR and CORN chowder recipe to warm up any cold winter day.
2 tbsp KEFALOS butter
1 chopped onion
1/4 cup flour
2 cups vegetable or chicken stock
3 medium diced potatoes
2 cups fresh or frozen corn
2 cups KEFALOS milk
1,5 cups KEFALOS diced cheddar
Salt
Pepper
Use a large saucepan. Heat the KEFALOS butter on medium-low and sauté the onion until soft and translucent.
Stir in the flour little by little until blended and then add the stock while stirring. Bring to a boil; and stir until thickened.
Add the corn and potatoes. Season with salt to taste and return to a boil. Cover and simmer at reduced heat for 15-20 minutes.
When the potatoes are cooked, add KEFALOS milk and stir until the soup comes to a boil.
Turn off the heat. Stir in the KEFALOS diced cheddar until melted and season with pepper to taste.
Serve in your favourite bowls and enjoy
