Kefalos Dutch Gouda

Gouda cheese: a Dutch delight and 10 delicious ways to savour its flavour

Gouda is a semi-hard Dutch cheese made from cow’s milk. It is named after the city of Gouda, where it was first produced in the Middle Ages. It is believed that this cheese was first made during the 12th century, and it has been a popular cheese in the Netherlands and around the world ever since.

Gouda cheese is traditionally made using a process known as “washing the curd”. After heating the milk, a starter culture and rennet are added to coagulate the curd. Once the curd has been cut, the whey is drained off, and the curd is washed with warm water. This helps to remove the lactose and gives the cheese its distinctive flavour.

The cheese is then shaped into a wheel and aged for several weeks to several years, depending on the desired flavour and texture. Gouda is typically a pale yellow in colour, with a smooth, creamy texture and a nutty, buttery flavour. As it ages, it becomes firmer and develops a more complex flavour.

At Kefalos we produce a Dutch style yellow Gouda, for those more inclined towards a gentle cheese flavour as well as a semi-hard white gouda with a dense, smooth, and springy texture with buttery notes and a hint of sweetness.
