The good old faithful jacket potato should never be underrated. Very easy to prepare (five to seven minutes per potato in the microwave), it is a delicious crowd-pleaser and ranks high when it comes to wholesome comfort food. Here we share our six favourite fillings to elevate the humble potato to acclaim:
- Cheddar treat: KEFALOS grated cheddar cheese with fried bacon bits and chopped onion.
- Greek inspiration: Mix crumbed KEFALOS Greek style feta with KEFALOS Greek style yoghurt and dill. This is a delicious dressing served cold on a warm potato.
- Italian flavours: Top the potato with grated KEFALOS mozzarella, ripe cocktail or rosa tomatoes and fresh basil or basil pesto. Place in the oven until the cheese is melted.
- Bolognaise: Fry some onion and seasoned mince in olive oil until brown. Stir in tomato paste with a dash of sugar and add a little water or stock for the bolognaise to reach your preferred consistency. Spoon the bolognaise over the baked potato and top with some finely grated KEFALOS kefalotiri cheese.
- Tropical: Top the potato with two slices of KEFALOS Lazy Daizy processed cheese, a slice of ham, a dash of sweet mustard, and a ring or pieces of canned pineapple.
- Hot dog spud: This one should be a winner with the kids. Cut the baked potato lengthwise. Sprinkle some grated KEFALOS gouda cheese on the potato and place a vienna sausage on the bed of cheese. Top with tomato sauce and mustard. You can also add sliced pickles for extra tang.
